Easy Banana Muffins


1 large ripe banana, mashed with fork (or 2 small ones)

1.5 cups wholemeal spelt flour

1.5 tsp baking powder

1/2 cup almond meal

1 tsp ground ginger

2 tsp cinnamon

1 egg

1 tsp vanilla extract (or paste)

1/3 cup maple syrup

1/4 cup olive oil

1/4 cup almond milk

pinch of pink sea salt

sesame seeds to sprinkle on top


Preheat oven to 180C.

Mix wet ingredients together with a fork. Add to dry ingredients and mix well.

Spoon into paper muffin cases and sprinkle the tops with sesame seeds (or any other seeds you like!)

Bake for 20-25 minutes.

Makes 12.
