Oat Pancakes

Oats are a great addition to your diet as they can help lower cholesterol and are an excellent source of fibre too. Porridge can be a bit boring so here’s a way to spice up oats for breakfast!

These pancakes are a bit more dense than flour based pancakes so you won’t need to eat as many to feel full.

I make these in adult size and baby size so the whole family can enjoy this one!

Ingredients

1 cup oats
1/2 tsp baking powder
1 egg
1/2 cup almond milk
1 tsp vanilla extract
Olive oil for cooking

Method

Blitz oats in food processor until fine. Add baking powder and mix well.

Combine wet ingredients and whisk well. Add to dry ingredients and whisk until combined.

Stand for 2 minutes, while you heat a fry pan.

Fry in batches using olive oil. Roughly 1 min each side (turn when pancake bubbles up on top).

Serve with fruit, lemon or maple syrup for a treat!
