Melbourne has had some warm summer nights lately so there has been lots of BBQ’s and lots of salad. This salad is quick and easy and the simple dressing really takes it to the next level! Delish! (The dressing would work on any salad ingredients so this recipe is very adaptable for whatever you have on hand)
1 medium cucumber, sliced
1 red capsicum, sliced into strips
1 avocado, sliced
1/4 cup Greek style yoghurt
2 tbs olive oil
2 tbs freshly chopped dill
cracked black pepper to taste
Combine salad ingredients in large bowl.
Mix dressing ingredients until smooth. Dollop over the salad, and toss to mix through.
