Seeds are a fabulous inclusion as part of a healthy diet. They are rich in antioxidants, vitamins and minerals, like Vitamin E and Magnesium. Wonderful minerals for cell repair and to keep hair and nails healthy and looking good. This recipe is a great way to spice up seeds and make them into a fabulous snack, perfect for that 3pm slump. They are super fast to make too. I like to whip up a weekly batch and keep in an airtight container ready for snacking on the go.
1/2 cup Pepitas (pumpkin seeds)
1/2 cup Sunflower kernels
1/4 cup Sesame seeds
1/2 tbs Tamari
Pinch of Chilli powder (add more if you like it spicy)
2-3 drops Sesame oil
Combine all ingredients except the sesame seeds, and stir well to coat the seeds evenly.
Heat a non stick pan until very hot. Add the seeds, but keep the sesame seeds aside for now. Cook, stirring constantly until seeds start to brown, then add the sesame seeds for the last 20-30 seconds of cooking as they will brown very quickly.
Remove from heat to cool. Seeds will become crunchy on standing.
Enjoy a handful of these as a delicious healthy snack!
