Beetroot Salad

Long summer days are perfect for simple BBQ dinners with yummy, fresh salads! This one is a fabulous one make when you want to branch out from the boring old green salad. It’s so easy to throw together and it really sings on the plate. Even better, everything is raw so no cooking required! Too easy! (It’s also loaded with Vitamin C so it’s a great immune booster too!)


1 medium beetroot, peeled

1 Carrot, peeled

1 Zucchini. washed

¼ Cup freshly chopped coriander

2 tbs red wine vinegar

1 tbs olive oil

Juice of half a lime


Grate the beetroot, carrot and zucchini into a large bowl (I use my food processors ‘coarse grate’ function for this but you could do it by hand without too much fuss).

Stir in the coriander.

Combine the vinegar, oil and lime juice in a small bowl and mix well. Pour over the salad and toss through. Season with some fresh black pepper.

Serve alongside some grilled meat or fish.
