Banana Bread

This healthy banana bread isn’t loaded with refined sugar so is a great snack option. It’s packed with nuts, seeds and is rich in omega 3, magnesium and packed with fibre. My one year old loves this bread and it’s a healthy lunch option for her too. I like to slice it up and freeze it in portions ready to grab on the go.


1 Cup almond meal

1 Cup spelt flour (or regular plain flour)

½ Cup shredded coconut (or desiccated is fine too)

1 Tbs cinnamon

¼ Cup pepitas

¼ Cup sunflower seeds

1 Tsp baking powder

2 ripe bananas, mashed

3 eggs

2 Tbs olive oil

4 Tbs maple syrup

½ Tbs sesame seeds for sprinkling on top (optional)


Preheat oven to 180 C. Line a loaf tin with baking paper (I use 21cm x 11cm).

Mix dry ingredients (including seeds) in a bowl.

Mix wet ingredients and whisk until combined, then add to dry ingredients and mix well with a spoon.

Pour mixture into loaf tin and sprinkle with sesame seeds (flaked almonds also work well too).

Bake for 40-45 minutes until nicely browned on top.

Cool on a wire rack and serve warm or cold.
