Strawberry & Peanut Butter Muffins

These delicious muffins are little protein kicks, which are free from refined sugar. Great for morning tea or a post workout snack. My toddler loves these as they are perfect for little hands and can be eaten on the go.

Ingredients

1 Cup fresh chopped Strawberries

1 egg

1 tbs Peanut Butter

1 tbs maple syrup

1 tsp vanilla extract

1/2 cup milk (use almond milk for dairy free)

1 ½ cups plain spelt flour (or regular plain flour)

1 tsp baking powder

1 tbs almond meal

1 tsp cinnamon

Method

Preheat oven to 180 C.

Put the strawberries, peanut butter and all the wet ingredients in a blender and blitz until combined (the nutribullet works well for this).

Combine all the dry ingredients in a mixing bowl. Add the wet ingredients and stir until well combined.

Add mixture to greased mini muffin tins and bake for 15-20 minutes until lightly browned.
